Upon request: Fastest Yeast Bread (from Bittman's _How to Cook Everything_) Add one tablespoon or so of minced fresh herbs during step 1 - I used rosemary, but parsley, dill or sage are also recommended. Also note that rosemary adds a savory taste and so slightly less salt may be better. Ingredients: 1. Combine flour, yeast, and salt in bowl. Add water all at once, stirring with wooden spoon. Add the olive oil and continue to mix for about five minutes by hand. Add more water by the Tblsp if necessary. 2. Shape the dough into a long loaf, adding only enough flour to allow you to handle the dough. Place on baking sheet. Let rise in warmest place in kitchen, covered, while oven preheats to 425F. (I place mine over the fridge) 3. Brush loaf with water, sprinkle with coarse salt if you like; bake at 425F on sheet for 15 minutes. 4. Lower heat to 350F and continue baking until done - the crust will be golden and crisp - about 30-45 minutes more. Happy baking! leave a note
